Activated Almonds



FINALLY! I'M IN VOGUE!
I've been soaking almonds since I started following my new lifestyle diet under the guidance of my nutritionist. But now it's got a fancy cool new name! Activated Almonds. And dang you can even buy them from the health food shop. But at a WHOPPING cost (see here!)
Luckily they require minimal effort to prepare yourself. Basically a monkey could make these. All you do to 'activate' them is soak them in water over night. They swell up and this process helps to break down the phytic acids of the nuts, allowing for easier digestion! Then you dry them out slowly and voila! Activated nuts. You can now be a food snob.




Activated Almonds

Prep time: 1 mins
Soak time: 12 hours/Overnight
Roast time: 1 hour
Total time: 13 hours

Ingredients
200g Almonds
1 tsp cinnamon
1 tsp smoked paprika
Pinch of pink himalayan salt

Method

Cover the almonds in water and soak in the fridge over night.  
Drain the almonds and rinse thoroughly. Whilst they are wet, combine with the salt, cinnamon and smoked paprika or any spices/flavourings you fancy! 
Place in the middle of your oven and set it to the lowest temperature. Bake in the oven to dry out for about an hour, checking occasionally. Leave longer if necessary.

Once dry they are so crunchy and so delicious, you'll never go back!
