Ice Lollies



Summer summer summer time...
Gosh we have been blessed with some lovely hot weather of late! It can sometimes seem unfair that I can't indulge in an ice lolly from an ice cream van anymore... so I whipped these up the other day to satiate my ice lolly fix whilst staying gloriously healthy!
This lolly mould was £1.50 from Asda by the way! I love it, they're kinda small, but that's perfect for a treat ^-^






Ice Lollies

Prep time: 10 mins
Freeze time: 4 hours

Ingredients

Raspberry and Mint Ice Lolly:

1/2 Tin full fat coconut milk
Handful of frozen raspberries
Handful fresh mint

Chocolate and Banana Ice Lolly:

1 ripe banana
2 tbsp full fat coconut milk
1 tbsp cacao

Method
Add ingredients for your chosen lolly flavour to a blender and blend until smooth. For extra texture, add a few frozen raspberrys to the moulds or sprinkle cacao nibs into the chocolate and banana mix for choc chip!
