Flax 'Multi-grain Style' Flatbread

I love this as a quick addition to my protein breakfasts! It holds together really well and is flexible enough to use as burger buns! Yum!

Flax 'Multi-grain' Style Flatbread

Prep time: 2 min
Cook time: 4mins
Total time: 6 mins... beat that :)

1 tbsp milled Flaxseed
1 tbsp Coconut Flour
1 tbsp soaked mixed seeds
1 Egg
Salt, Pepper and any seasoning’s you fancy to taste!
Nob of coconut oil for frying.


Thoroughly mix all the ingredients in a bowl. Heat a nonstick pan on the stove with a nob of coconut oil in. Whilst the pan is heating, split the mixture in to two equal parts and roll each into a bowl using your palms. They can be squished down using you hands or rolled neatly between two pieces of baking paper with a rolling pin if you're fancy! When the pan is hot, add one portion to the hot oil and fry like a pancake until the edges crisp up and the bread moves around easily in the pan, usually 2 mins. Flip and cook the other side for 2 mins. É voila! Repeat with the last portion and serve however you like!

I topped mine with tomato purée and garlic mushrooms. And bacon. THERE'S ALWAYS ROOM FOR BACON.
