Chocolate Orange Almond Loaf


I can't come up with anything witty or clever to say about this divine intervention in cake like form. It is literally the best thing I had ever tasted (especially after I-don't-know-how-many-weeks on a strict elimination diet!) 
It so decadent. Just, just make it ok? It'll cheer you RIGHT up! 






Chocolate Orange Almond Loaf


Prep time: 5 mins
Cook time: 30 mins
Total time: 35 mins

Ingredients

6oz ground almonds
2 over ripe bananas
3 eggs
1 cup of chopped walnuts
2 tbsp melted coconut oil
2 tbsp raw criollo cacao powder
1 vanilla pod
Zest of one orange
1/2 tsp bicarbonate of soda 




Method

Preheat the oven to 180°C.
In a bowl, mash the bananas thoroughly with a fork. Add the rest of the wet ingredients (eggs, oil and vanilla seeds scraped from the vanilla pod) and combine well (for a smoothly textured cake, blend in a food processor.)
In a larger bowl, combine the dry ingredients (ground almonds, bicarbonate of soda, chopped walnuts)
Combine the wet and the dry evenly with a spoon. Mix in the orange zest.
Spoon the mixture into a lined loaf tin.
Place the loaf into the centre of the oven and bake for 30mins, until golden brown on top or a knife comes out clean.
Remove from oven and cool in the loaf tin for 15mins, then remove to cool on a wire rack.

SERVE WITH NUTELLA. I double dare you!




It didn't stick around long enough for me to take amazingly arty, beautifully staged photo pictures. It's that hard to not eat.
