Celeriac Falafel


I squeeeeee'd an awful lot when I made this for the first time! I don't miss the real thing at all. I am totally having a love affair with the humble celeriac!





Falafel

Prep time: 10 mins
Cook time: 20 mins
Total time: 30 mins

Ingredients

¼ celeriac, shredded
1 egg
1 tbsp coconut flour
1 tsp turmeric
1 tsp cumin
1 clove garlic mashed
Handful of fresh coriander
Salt and pepper to taste

Blobs of homemade ghee

Method


Preheat the oven to 180ÂșC.
Combine all the ingredients in a large bowl and use a tablespoon to divide into separate portions. Roll each tablespoon into a ball in your hands and place on a lined baking tray. Plop a little bit of ghee on top of each falafel (about ½ tsp) and place into the middle of the oven. Bake for 15 mins, then turn and bake for 15mins more. Check often incase they become over done – they should be a lovely, crispy golden brown.

Serve with a huge salad or on the side of any dish you fancy! This is a portion for one, so double accordingly!
