Banana Pancakes




I have been tinkering with banana pancakes recipes for ages, and finally come to the conclusion that less is more! This recipe only requires 3 main ingredients, but you can tart it up however you fancy!



I love to make a chocolate sauce if I fancy super sweet pudding, or add blueberries for a fruity breakfast!



Banana Pancakes


Prep time: 2 min
Cook time: 10mins
Total time: 12 mins

Ingredients

1 over ripe banana
1 egg
1 tbsp ground almonds
Coconut oil for frying

Method

Mash the ingredients in a bowl with a fork (or in a food processor for a smooth batter.)
Melt a little coconut oil in a non stick frying pan on a medium heat. Once hot, spoon the pancake mixture into the frying pan 1 tbsp at a time. The pancakes will be small, but delicious! Cook the pancakes for a couple of minutes on a gentle heat, checking the underneath occasionally with a spatula. Once ready, flip and cook the other side for 1 minute. The trick is to keep the pancakes at a lower temperature, but cooking for slightly longer than traditional pancakes, so they don't colour too much!

Once ready, keep on a plate in a warm oven until the rest of the mix is done, or eat immediately!
