Apple and Blueberry Scone

 This is a great recipe for when I need a sweet treat but I am low on all ingredients! I always have blueberries in the freezer and it only requires 1 egg and 1 cup of ground almonds! You can add any fruit and flavourings you like, you can treat this as a base. Maybe a tbsp of raw criollo cacao powder and raspberries? Mmmm....

Apple and Blueberry Scone

Prep time: 5 mins
Cook time: 25-30 mins
Total time: 35 mins


4 oz ground almonds
4 oz frozen blueberries
2 oz stewed apples
1 egg
1 tsp cinnamon
1/2 tsp bicarbonate of soda
Pinch of salt


Preheat your oven to 180°C.
In a large bowl, combine the dry ingredients. Add the wet ingredients and mix thoroughly. Place the mixture in a shallow pie dish or onto a line baking tray, about half an inch thick in a circular shape.
Bake for 25-30 minutes, checking towards the end. The top will be crispy and a knife should come out clean.
The frozen blueberries thaw and turn heavenly gooey, it's so hard not to eat it all right off the sheet with a spoon!
