Blueberries and Coconut Cream




On a Paleo diet, it's a great habit to stick to fresh, healthy, natural foods in order to help keep our sugar cravings to a minimum. Sometimes, believe it or not, I don't want a cake and dessert. Trying to recreate 'old favourites' within the Paleo guidelines kind of defeats the point of enjoying a healthy, earthy, ancestral diet.

Sometimes, a small bowl of frozen blueberries (I always keep a punnet in my freezer!) and some luscious, thick coconut milk are all you need to hit that spot. If you store your full fat canned coconut milk in the fridge, the fat will separate and rise to the top, creating a gorgeously thick double cream consistency.

Ingredients
Frozen (or fresh) Blueberries
Full Fat (refrigerated) Coconut Milk

Method

Join the two ingredients in holy matrimony and savour in bliss.
